Pottery nuka jars feature low heat conductivity and excellent heat retention, creating a stable environment ideal for microbial fermentation. They also offer the benefits of minimal chemical leaching and odor transfer. Even beginners to nuka pickling can use them with confidence.

Nukazuke is actually simple, just pickle your vegetables directly.

Nukadoko (fermented rice bran bed) using a store-bought rice bran is recommended for beginners. About 1.0kg of nukadoko is just the right amount. Once you have your nukadoko ready, simply pickle your favorite ingredients.

White Spots

Some pickling jars may have small white spots inside or on the bottom.
These are glaze patterns formed naturally during firing and do not affect quality or usability.

Pinholes

When bisque-fired, air trapped in the clay body or organic matter (such as dust) may remain as tiny holes after firing. These small holes are called pinholes. A visual specialty of pottery, these do not effect the quality of the product, and there is no need for further concern when used.
